Elderberry waffles
Bright purple pancake syrup always reminds me of eating breakfast at Denny’s as a little girl and hungrily eyeing the bottles of colorful syrup on the table. As a kid, neon purple syrup looks awesome but as an adult, it looks a little suspicious.
Elderberry syrup yields a fabulously bright blue color and the flavor is *berry* delicious (pun intended!). Best part is that it’s completely natural. So what do you do with all of the leftover pulp from those berries?
You throw it in some waffle batter and pair it with a generous drizzle of elderberry syrup.
Recipe:
1/2 cup butter, melted
2 Tbsp brown sugar OR 2 Tbsp sweetened protein powder (I use Orgain)
3 large eggs
2 tsp cinnamon
3 cups wheat flour
1 tsp sea salt
3 tsp baking powder
2 cups whole milk
1 cup elderberry pulp
In a large bowl melt the butter then add the next three ingredients, stirring after each addition. Then add the dry ingredients (don’t stir) and add in the milk and pulp and stir until combined.
Prepare and grease your favorite waffle iron (I use this one) and proceed.
