Watermelon Appreciation

During these hot, dry, drought-y Utah summers, watermelon becomes my family's main food group.

What have I had to eat today? Watermelon, a cookie, watermelon, a small pile of salted pulled pork, watermelon and, uh more watermelon. 

But after surviving two summer pregnancies, one baby in late August and one in early September, I have a pretty giddy appreciation for it.  

So in honor of late summer and the best of the fruits to be eaten in late summer, this is how I survive the dog days.

Start with a washed and dried watermelon. A butcher's knife and a safe place to cut on. I never cut on a cutting board since the watermelon absorbs all of the smells! 

Lop off both ends. Lay on one end and carve and shave all of the rind off. Cut into 1" slices. Then cut those in criss cross patterns until you end up with cubes. Store in airtight container in the fridge.
