Chicken and cabbage soup (keto-friendly)
My husband has started the Keto diet and I reeeally applaud him for it. I mean it- I’m really proud of him! This diet is intense and freaking rough and not for the faint-of-heart. Especially if you have kids. Why? Because kids make you insane and you need lots of sugar and happy brainy carbs to keep you from losing your shit. At least I do.
While I’m all for sugar in my coffee and chocolate breaks throughout the day to keep my sanity in check… I’ve been trying harder to make a healthy meal that we can all eat.
Even my kids ate this soup which is quite shocking because it wasn’t covered in sugar and they somehow still liked it which makes which leads me to believe that it’s some sort of miracle soup.
Chicken and cabbage soup
Roasted chicken, carved, white meat reserved and dark meat chopped
Homemade chicken bone broth (from carcass simmered overnight)
1/2 cup (1 stick) butter
garlic, minced
Cabbage, thinly sliced
bag of fresh spinach
Salt
Fresh pepper
In a large stockpot melt butter and add the cabbage. Saute for a few minutes then add the garlic. Cook until slightly fragrant from the garlic. Add strained broth and chicken. Bring to boil and simmer for five minutes. Don’t cook too long or it can make the cabbage mushy. After five minutes, stir in spinach then immediately pull from heat and put a lid. Let sit 10-15 minutes.
