Twix cookies
Healthy-ish twix cookie recipe:
Shortbread crust:
1.5 cups almond flour
1/4 cup Monkfruit brown sugar
1/4 tsp salt
3 Tbsp coconut oil
2 Tbsp milk
1 tsp vanilla extract
Caramel: (I made a keto dulce de leche sauce)
1.5 cups heavy cream
1/3 cup allulose
3 tablespoon Monkfruit brown sugar
1/4 tsp salt
(combine all three ingredients and let simmer for 45 min on lowest temperature setting in a large saucepan. Stir occasionally. cream will begin to slowly caramelize and deepen in flavor. turn off when it reaches desired thickness.)
Chocolate:
Keto chocolate chips or regular chocolate chips. I usually melt about a half a cup with tbsp coconut oil and stir.
Keep in fridge, as they aren’t really shelf stable. These would probably be even better with peanut butter added into the dulce de leche after it has cooked.
