Simple meals for springtime
Pea and pesto pasta. Make and freeze pesto in advance or buy your favorite kind. Cook pasta, add in peas the last couple of mins and quickly drain and cool. Stir in pesto and voila!
Navajo tacos (more or less ingredients depending on toppings)
Chicken and broccoli cooked in a coconut cream pasta sauce
Kabobs!!! Because eating food off of a stick is always funner!
Pan-fried salmon on a bed of mashed beans and buttered peas
Bacon. turkey, and avocado club sandwich
Rigatoni with freezer meatballs in a canned, diced tomato and spinach sauce
Simple guacamole- honestly, the less ingredients, the better. A few diced tomatoes, lots of mashed avocado, a sprinkle of cilantro, squirt of lime, and pinch of salt. That and a bag of good tortilla chips can be called dinner.
Warmed chickpeas and almonds sprinkled with salt, rosemary, and olive oil
Cabbage and sausage sauteed in butter and olive oil. One of my favorite foods. Add some fried potatoes to make it even better.
Three-ingredient "Brazillian Lemonade". I still don't know why it's called lemonade when no lemons are present. Still... It's amazing. I use a can of coconut milk and add sugar and {unpeeled} quartered limes. Blend it in the blender for a few seconds and strain through a mesh strain. This punch will soothe family fights during a Cinco De Mayo party.
Rich, tart, chewy, and utterly divine lemon bars. I baked these for myself on Mother's day. At least my tears tasted sweet.
