Quick teriyaki bowls

The beauty of this dish is really in the simplicity of it. It's so quick and minimal ingredients. Of course the key is to finding or already having a good quality brand of Teriyaki that you love. I used to shy away from using already prepared sauces when I felt like I could do better by making my own... BUT that was before I had kids. Now I truly appreciate and am willing to spend a little more on a brand that I find tasty and half of the work is already done for me.

This recipe is also great for those who want to plan out and pre-package their meals for the week too!

Ingredients:

1 cup quinoa

2 lbs broccoli, stalks removed and chopped into tiny trees

1 package frozen Edamame (thawed)

1 package frozen medium shrimp (thawed)

3/4 cup of your favorite Teriyaki (I like the Kikkoman brand)

Steam broccoli with a colander set over a pot of boiling water. Cover and steam for 7-10 mins; set aside. Cook quinoa according to package instructions; set aside.

Drizzle a 2 tbsp of olive oil in a large non-stick pan with a lid. Add the Edamame, put the lid on and let soften 3-4 minutes. Uncover and add 2 Tbsp butter, sprinkle in some salt and pepper then add the shrimp. Cook until opaque, stirring every so often, for 3-4 minutes. Add the Teriyaki (to taste) and heat through. Serve on a bed of quinoa.  Enjoy!
