cheesy cauliflower bake (keto)

This is like Mormon Funeral Potatoes, without the potatoes. Total comfort food and totally satisfying. And you will NOT miss the potatoes!!

**This also goes perfect with baked ham and green beans, in case you needed to know ;)

2 heads cauliflower, chopped

1 cup sour cream

1 cup cream

2 cups chopped or grated cheddar cheese

1 onion chopped

minced garlic

1 cube butter

Cook cauliflower in a stockpot, level with water. Set on med-high with a lid for 25 minutes or until softened.

In medium saucepan, add butter, onion and garlic and cook on low for 10-15 minutes until onions are soft. Add in salt and pepper. Add in sour cream and half of the cream. Add in half of the cheese. Stir until melted.

Once cauliflower is cooked and soft, drain. In a large casserole dish or other baking dish (I used my enameled-dutch oven), add in cauliflower and use a potato masher to mash. Add in 1/2 cup butter and cream and continue mashing until small pebble consistency.

Add in sour cream mixture and the remaining cheese and combine. Bake at 400 degrees for 15 minutes, covered.
