Peanut Butter & Honey Granola- big batch!

We are serious granola fans around here, especially a certain little 2.5 year old. If Leif could eat granola for three square meals he probably would. But then suddenly the next day he would hate it. Yes, a classical and hair-pulling move from the ever-changing mood of a little person.

But on the days that he does like it, well this is what we eat for breakfast and it seriously tastes so much better than cereal. Plus we're not hungry an hour later either!

1 cup coconut oil

1 cup honey

1 cup peanut butter

1/4 tsp fine sea salt

8 cups old-fashioned oats

Handful coarsely chopped walnuts (optional)

Bring the first four ingredients into a microwave-safe bowl and melt on high for two minutes, just enough until the coconut oil is melted. Stir until combined. Stir in oats and mix well.

Evenly distribute onto one or two baking sheets so that there is a thin layer of oats. Bake at 325 degrees for 18-22 mins, stirring halfway through.

Let cool completely and store in glass mason jars or airtight container.
