Coconut Milk Yogurt
Since having to avoid dairy in our family, I have missed and craved oh-so-many things. Cheese (duh), sour cream, and, um, pretty much any by-product of milk that I can think of. Finding subs for dairy is pretty daunting especially if (1) you don't live anywhere near a Sprouts where you can run over and find a ready-made dairy alternative and (2) I really don't like the idea of subbing in processed foods just to imitate the real thing.
This coconut milk yogurt was easy and with a few simple steps and only 24 hours of hands-off waiting time, it was ready! I'm so excited to try this with granola and some fruit. The end result is a slightly tangy, slightly coconut-y, and super creamy yogurt. Naturally sweet and tangy without any processed ingredients, fake sugar, or crap that is found in lots of store-bought yogurt!
Coconut Milk Yogurt
2 cans coconut full-fat coconut milk (look at the label and try to find one with simple ingredients)
3 tsp gelatin (like this kind here)
4 probiotic capsules or 4 tablespoons store-bought coconut yogurt
2 tablespoons raw sugar or maple syrup, optional
You will need two pint-size glass mason jars with lids. Sterilize the jars with hot, boiling water and set aside.
Shake the unopened cans of coconut milk and pour into a medium saucepan. Whisk the coconut milk until its creamy and all the lumps are gone and sprinkle on the gelatin. Turn heat onto med-low heat and let the gelatin slowly dissolve and then slowly whisk it into the milk.
Turn the oven onto warm for a few minutes then turn it off and keep the oven closed.
Let the milk slowly simmer (not boil) for 10-15 mins. Turn off heat and let it cool completely to room temperature. Sprinkle on the probiotic capsules or stir in the yogurt. Stir in the sugar until dissolved.
Pour into the jars and seal with the lids place in the oven for 24 hours. After the 24 hours, open the jars and stir (separation will occur). Place in the fridge until ready to eat.
