Easy Pesto
If you own a food processor then don't ever buy pesto. It is so easy, cheap, and most ingredients you may already have on hand.
Pesto is pretty much a flavor bomb so whatever you add it to- pasta, pizza, chicken- will take on that flavor pretty strongly.
Another great thing about pesto is that it's an awesome way to hide your greens. I once hid dandelion greens from our yard in some pesto and gave it to my husband. He though it was spinach pesto. Surprisingly, the dandelion pesto was one of the tastiest and mildest batches of pesto I have made!
Easy Pesto
1/3 cup walnuts
2 cloves garlic, smashed
2 tsp sea salt
2 tbsp nutritional yeast or freshly grated Parmesan cheese
6 packed cups of spinach, kale, dandelion leaves, etc.
1/3 to 1/2 cup olive oil
In a food processor layer the first five ingredients in the order listed. You may need to add the spinach in batches and process to make room for more. Turn on the processor and begin to drizzle in the olive oil as you go. Continue this until you get everything processed. The pesto should be smooth yet slightly gritty. Taste and adjust salt and yeast or cheese to your liking.
Store in small mason jars. Will stay good in the fridge for a week or in the freezer for 6 months.
