Creamy Butternut Squash soup
This post was inspired by the two-year old bag of diced butternut squash that was jammed in the back of my freezer while I was in a cleaning frenzy. Having no idea what to do with it, I decided to try a soup since I had some bone broth simmering in the crock pot. I was way too lazy to follow a recipe that involved cutting up onions and carrots. Plus all I had were sweet potatoes... So this is how this soup was invented!
Since I am still in the phase of my pregnancy that nothing sounds good at all, especially after 5 pm, I had this. It was simple, slightly sweet, comforting, and I wasn't hungry at all for the rest of the night! I really am becoming a believer in bone broth and it's health benefits. The richness and fattiness of the bone broth completely coats your belly making you feel nourished and satisfied without eating a big meal.
If you don't have homemade stock or broth on hand you can substitute it for bouillon and water. With four simple ingredients you will be shocked at how delicious, creamy, and satisfying this soup is!
Creamy Butternut Squash Soup
1 large sweet potato, diced
2 cups diced butternut squash
2 tsp sea salt
4 cups homemade beef or chicken broth
Add all ingredients into a 6 qt. pot and put a lid on. Bring heat to medium-high and let simmer for 20 mins. Let cool. Use and immersion blender or a food processor and puree.
Best served warm.
