These bars are delicious! I had a bag of blueberries from last summer in my freezer that needed to be used up. I adapted this recipe from Allrecipes but doubled the oat mixture because- well- I love my pastry ratio to be a little higher than the fruit. No shame here.
What I love about this recipe is the simplicity. The oat mixture comes together in under 5 mins and the blueberry mixture doesn't require any cornstarch or stove top cooking time. Also, the bars stay together very well once they're cooled. Milk is a lovely accompaniment but I'm thinking next time a nice cup of hot coffee will be even better!

Blueberry oat bars
1.5 cups flour
1.5 cups old-fashioned oats
3/4 tsp baking soda
3/4 tsp salt
3/4 cup brown sugar
1 cup coconut oil or butter
2 cups fresh or frozen blueberries
1/2 cup white sugar
2 tbsp melted coconut oil or butter
Turbinado sugar for sprinkling
Preheat oven to 350 degrees.
MIx the first five ingredients in a large bowl. Add the coconut oil and use a whisk or fork to break into smaller chunks. Set aside.
Melt coconut oil into a bowl and add the berries and sugar and stir.
In a greased 9 X 11" pan sprinkle half of the dry mixture on bottom. Pour the blueberry mixture over it and cover with the remaining dry mixtrure. Use a spatula to gently press and smooth it down.
Bake for 30 mins. For extra texture and crunch, sprinkle Turbinado sugar over the top while still warm.
Let cool and cut into squares. Enjoy!
