After recovering from total sugar shock during the holidays I needed a slightly healthier snack. While these do still have sugar in them they also have blackstrap molasses (iron rich!) and some other healthy goodies like prunes and figs and nuts as well. So that cancels out the sugar, right? Also, I prefer my cookies flatter and less puffy but if you like yours on the puffier side then lessen the coconut oil by 1/4 cup. The finely diced figs and prunes almost seem to melt in to the cookie, adding another layer of natural sweetness..

Chewy Oatmeal Prune & Fig Cookies
1.5 cups all-purpose flour
3 cups old-fashioned oats
1 tsp baking soda
1 tsp salt
1.5 tsp cinnamon
1 and 1/4 cup coconut oil (melted and slightly cooled)
1 cup brown sugar
1/4 cup granulated sugar
2 eggs
1 tablespoon vanilla extract
1 tablespoon almond extract
1-2 cups very finely chopped pitted dates and prunes
Preheat oven to 350 degrees.
In a medium-sized bowl add the first five dry ingredients and whisk together; set aside. In a large, separate bowl, combine the coconut oil, sugar, honey, and extracts; whisk until combined and smoothed. Add eggs and whisk until combined.
Add the chopped dates and prunes to the wet ingredients then slowly incorporate the dry into the wet in batches, stirring in between each batch.
Line two baking pans with parchment paper or silicon baking mats. Using a spoon or ice cream scooper, scoop 1.5" balls and place 3" apart.
Bake for 8-10 mins. Yields about 48 cookies.
*If you prefer taller and less spread out cookies, try chilling the dough for a half hour before baking.
