Vegan Alfredo Sauce

I found this recipe this wildly creative recipe from The One Ingredient Chef. It is vegan and is made with simple ingredients and yet it turns out so rich and decadent that it really surprises me each time I taste it. 

I always double this recipe and freeze half of it in quart jars. Once thawed, it easily can be thrown into a pasta dish or poured on top of a pizza dough for a super easy dinner idea!

Vegan Alfredo Sauce

2.5 cups chopped cauliflower

1.5 cups plain, unsweeetened almond milk

1/3 cup nutritional yeast

3-4 tablespoons tahini

1 clove chopped garlic

1 lemon (juice)

In a large pot bring together all of the ingredients over medium-low heat and cover. Do not boil, just simmer for 15-20 mins or until cauliflower is soft and tender. Either using an immersion stick blender or pour into a food processor and process until no chunks remain. Taste and adjust seasonings- salt, nutritional yeast, lemon- to your liking.
