I am always, always on the hunt for a new and improved cookie recipe. I have an absolute favorite from Mel's Kitchen Cafe (LOVE that blog!) that would be my go-to, everyday, standard chocolate chip cookie blog BUT my husband isn't on board. He prefers a less rich cookie. Wait-wha?? Isn't that the point of a cookie? I know... makes no sense.
So this is my standard chocolate chip cookie recipe. I cut it out of a package of Guittard chocolate chips. I literally keep it taped to the inside of my baking cabinet because I am a compulsive, desperate cookie baker. If we ever get low on baked treats I get desperate and, well, compulsive. I need a recipe front and center and easily accessible. Nothing special about this recipe unless, cookies are special to you. Then this recipe is priceless.
Chocolate Chip Cookies
1 cup butter or coconut oil, melted and cooled
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla extract
1 tsp almond extract
2.5 cups flour (I use freshly ground hard white wheat)
1 tsp salt
1 tsp baking soda
2 cups chocolate chips
1/4-1/2 cup chopped walnuts, optional
Preheat oven to 350 degrees. Cream together the butter and both sugars. Add in eggs and extracts whisk until well-mixed. In a separate bowl whisk flour, salt and baking soda together. Add dry ingredients, chocolate chips, and walnuts (if using) into wet ingredients and stir well.
Grease or line two baking sheets with parchment paper or non-stick liners. Using an ice cream scooper or two spoons, scoop 1" balls onto sheets. Bake for 7-9 mins. Let sit for 2-3 mins before transferring to cooling racks.
